Your story reminded me of my little Italian grandmother’s homemade chicken soup that none of us could ever duplicate. I could almost smell it while reading your recipe. Thank you for sharing it!
I should have added that my Italian grandma—an adopted one, but claimed by me! 😂—always tossed the rind from her Parmesan cheese into the pot. I’ve tried it and loved it, but hubby definitely does not! Thank you so much for reading and for bringing back that sweet memory. ❤️
Thanks for the soup recipe Cyndi ❤️. I love the story of nothing went to waste I freeze all my onion, carrot and peels, as well as the celery ends then make broth with them that’s way better than store bought. I keep them in a freezer bag then when I need them they go in a big pot with water, 1/2 tsp salt bring it to a boil then simmer for an hour.
That is such a great idea! ❤️ My grandmother would absolutely approve. She believed the best broth came from the things most people tossed away. I love the idea of keeping a freezer bag going with all those onion peels, carrot scraps and celery ends. Nothing wasted, and I bet the flavor is incredible. I’m stealing this one! 😊

It’s all yours Cyndi 😉. It puts the store bought stuff to shame.
